Authentic Japanese Wagyu Beef is all about texture. The quality of Wagyu is such that fat is woven finely like a net throughout the muscle. This called "marbling." It gives a tender texture that feels like each bite is melting in your mouth.
In 1997, the Japanese government declared Wagyu cattle a national treasure.

Japanese grading systems represents the pinnacle of marbling quality in Wagyu beef, known for its low melting point that ensures a sublime melt-in-your-mouth experience.

BMS System
A rigorous grading system based on two factors: yield grade and meat quality grade.
The yield grade is determined by the ratio of meat to the total weight of the carcass, categorized as A, B, or C, with A indicating a higher yield.

Four key criterias are assessed: Level of marbling, color and brightness of the meat, firmness and texture of the meat, and the color and brightness of the fat.

The meat quality grade is classified into five grades from 1 to 5, with 5 being the highest. The final grade assigned to the meat is determined by the lowest of the four individual grades.

This ensures that consumers have a clear indication of the quality and yield of the Wagyu beef they are purchasing.
